Thai Pork and Cucumber Stir Fry

 100 g Pork Belly
 2 lightly whisked eggs
 1 cucumber chopped into chunks
 3 cloves of garlic
 1 tbsp fish sauce
 12 tsp soft brown sugar
 3 tbsp chopped coriander leaves
 1 tsp ground white peppercorns
 1 tbsp sunflower oil

Pound the garlic in a pestle and mortar with a large pinch of sea salt.

Steam the pork and then cut it into large chunks.

Fry the garlic paste in the oil until brown then add the pork and stir fry it until it is brown.

Add the cucumber chunks and fry until translucent but not mushy.

Add the eggs and cook for a couple of minutes then add the fish sauce and sugar and stir for a few minutes until they are integrated.

Serve sprinkled with the pepper and coriander leaves.
